I would like to know which events are available for event handling. I can find no documentation regarding this. Maybe you could help me here on the forum instead?

You can see them in the intellisense if you type:
Litium."entity".Events
example:

Litium.Products.Events

for Ecommerce module use:

ModuleECommerce.Instance.EventManager
