Is there any good documentation about Target Groups? Not about creating new fields, but about it in general.
Like how long is the “Visited Category” saved?
Where is it saved? Cookie/Session?
Is Order Total saved for visitors or only logged in? If it saved for Visitors, where is that saved?

Unfortunately, I don’t think there’s any such documentation available.
But in general the target group is saved for the session. Some conditions - number of visits, order total and order frequency - are instead saved as a cookie on the device used. These will start tracking the first time the user visits the site after a target group with that condition was created.
Order total for logged in users exists as it’s separate filter for smart groups.
