I have multiple language set up with multiple channels and if I want to publish a change on a page only to one language, is that possible? Without the risk of publishing unfinished content from other languages.

The publishing of content for a page or a block is done for all languages. It is not possible to publish only the content of one language at a time.
One of the reasons we did it this way, was to try to keep it simple. Of course, we hope we did not simplify things too much.

Another question. Is it possible to go back to a earlier version of a published page? Or see what versions that have been published and by whom?
No, it is not possible to roll back to earlier versions or see the content of old versions of a page. By experience very few of our users actually used this feature, so we decided to remove it between version 6 and 7. How important is this in your case?
